Hand picked into 25lb yellow bins. Whole clusters rested overnight & destemmed (no crushing) the following day into 1 ton bins. Cool soaked for 24-48 hours prior to inoculation. 14-21 day maceration with punchdowns twice daily. Pressed, settled overnight & racked into a mix of new & used 255L & 228L French & American oak barrels. Malolactic fermentation occured in barrel. Aged in barrels without racking for 24 months. Bottled without filtration or fining.
